Ingredients for ragi dosa:
Ragi flour - 1 cup
sooji/semolina - 1/2 cup
yogurt/curd 1 cup
water - 1 cup
salt - 1 tbsp (adjust to your taste)
green chillies (chopped) - 2/3 according to your taste
half small onion finely chopped
baking soda - pinch (optional)
jeera/cumin seeds - 1 tbsp
coriander leaves & curry leaves - for garnish
Procedure:
- In a bowl mix all the above ingredients and whisk til everything is mixed properly
- Let it sit for 10 -15 mins
- heat a tawa/dosa pan and once the pan is heated pour 1-2 laddels of batter onto the tawa
- spread the batter evenly slowly and gently till u met the right thickness
- pour little oil around the edges of the dosa.
- let it cook well on one side and once it is done...flip it to cook on the other side.
Notes:
- Make sure that the tawa/griddle is not too hold or not too cold otherwise dosas does not come well
- If the first dosa does not come out well...its ok..its very common :-)
- If u want a little crispy dosa..add little rice flour and adjust the batter consistency accordingly
